Chicken Pacada

Chicken Pacada features tender breaded chicken breasts simmered in flavorful broth with bouillon, served over rice and topped with fresh lemon for a hearty, comforting meal.

Ingredients

  • 12 chicken breasts
  • 3 to 4 beaten eggs
  • a little milk
  • Progresso Italian bread crumbs
  • 1/2 stick margarine

Instructions

  1. Debone the chicken breasts.
  2. Pound each chicken breast to 1/4 inch thickness, starting from the big side.
  3. Dip the chicken in the beaten eggs with a little milk, then coat with Italian bread crumbs.
  4. Brown the breaded chicken in margarine over medium heat until thoroughly browned.
  5. Add water to the pot covering the chicken, then add chicken bouillon cubes.
  6. Bring to a boil and cook for 25 to 30 minutes.
  7. Serve hot over rice and sprinkle with fresh lemon.
