Ingredients

  • 1/4 cup pine nuts
  • 2 whole chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh pepper
  • 1 tablespoon olive oil
  • 1/2 cup dry white wine
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon capers
  • 3 tablespoons butter

Instructions

  1. Spread pine nuts on a baking dish and roast for about 4 minutes at 400°F.
  2. Gently pound chicken breasts thin.
  3. Season chicken with salt and pepper.
  4. Heat olive oil in a skillet and sauté chicken until cooked through.
  5. Remove chicken from skillet and place on a warm plate.
  6. Drain skillet, add white wine, and bring to a boil, scraping the bottom of the pan.
  7. Reduce the wine by half over high heat.
  8. Add lemon juice and capers to the skillet.
  9. Remove from heat and whisk in butter, one tablespoon at a time.
  10. Add any juice from the cooked chicken on the platter to the sauce.
  11. Pour sauce over the chicken and sprinkle with toasted pine nuts.
