- Preheat oven to 375°F.
- Separate crescent dinner rolls into 8 triangles and place 2 triangles, one on top of the other; press slightly. Repeat with remaining dough.
- Place the dough triangles on an ungreased cookie sheet and bake for 9 to 12 minutes.
- In a large saucepan, heat cream of chicken soup, frozen mixed vegetables, and poultry seasoning until bubbly.
- Fold in drained chunk chicken.
- Spoon the hot mixture into a 12 x 18-inch baking dish.
- Place the baked dough triangles on top of the mixture.
- Sprinkle with parsley if desired.
