Ingredients

  • 1 whole chicken
  • 1/2 bell pepper
  • 1 whole onion
  • 2 large stalks celery
  • salt

Instructions

  1. Boil the whole chicken until cooked through, adding chopped celery and bell pepper, and seasoning with salt and pepper.
  2. Make a roux by cooking oil and flour together until it turns a deep brown, almost burnt.
  3. Add sliced onion to the roux and cook until softened.
  4. Combine the cooked chicken and vegetables with the roux and cook until the flavors meld and the chicken is fully coated.
  5. Serve the chicken roux over cooked rice.
