"Lite" Jambalaya

A flavorful and hearty Louisiana-inspired dish blending chicken, turkey sausage, shrimp, and spices with rice for a satisfying, low-fat jambalaya perfect for family dinners.

Ingredients

  • 1 lb. chicken breast, boneless, skinless, cubed
  • 1 lb. turkey sausage
  • 6 oz. frozen shrimp
  • 1 Tbsp. butter
  • 1 c. onions, chopped
  • 3/4 c. green peppers, chopped
  • 2 cloves garlic, crushed
  • salt to taste
  • pepper to taste
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground cloves
  • 1 qt. chicken broth
  • 1 qt. water
  • 1 1/2 c. rice

Instructions

  1. In a heavy pan, saute chicken cubes, butter, onions, and garlic until chicken is thoroughly cooked.
  2. Add sausage, salt, pepper, nutmeg, and cloves; simmer on low heat for 3 to 5 minutes.
  3. Add chicken broth and water; bring to a boil.
  4. Stir in rice; lower heat and simmer, covered, for 20 minutes or until rice is tender and most of the liquid is absorbed.
  5. Stir in shrimp and cook until they are hot.
  6. Pour into a serving dish and sprinkle with cayenne pepper.
  7. Serve hot!
