Chicken Succotash

Instructions
- Steam chicken in chicken broth.
- Add a few celery leaves. When tender, remove and cool.
- Cover stock and chill.
- Take chicken meat from skin and bones in generous pieces.
- Wrap well and chill.
- Measure 3 cups fat free broth and place in a large kettle.
- Bring to a boil and add lima beans.
- Cover and cook until almost tender.
- Add corn, chicken, salt and pepper.
- Cover and simmer 10 to 15 minutes.
- Thicken broth.
