Chicken Succotash

Ingredients

  • 4 1/2 to 5 lb. roasting chicken
  • 6 c. canned chicken broth
  • celery leaves
  • 4 c. fresh shelled lima beans or 3 (10 oz.) pkg. frozen
  • 3 c. fresh corn
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Steam chicken in chicken broth.
  2. Add a few celery leaves. When tender, remove and cool.
  3. Cover stock and chill.
  4. Take chicken meat from skin and bones in generous pieces.
  5. Wrap well and chill.
  6. Measure 3 cups fat free broth and place in a large kettle.
  7. Bring to a boil and add lima beans.
  8. Cover and cook until almost tender.
  9. Add corn, chicken, salt and pepper.
  10. Cover and simmer 10 to 15 minutes.
  11. Thicken broth.
