Ingredients

  • 1 whole chicken, cut up
  • 3 potatoes
  • 2 zucchini squash
  • 2 tomatoes
  • 1 small onion
  • 2 Tbsp. cooking oil
  • 3 Tbsp. vinegar
  • 1/2 tsp. chili powder
  • 1/2 cup finely chopped lettuce
  • 1/2 tsp. dried ground oregano
  • shortening

Instructions

  1. Cook the zucchini squash, then slice it.
  2. Cook, peel, slice, and fry the potatoes.
  3. Cook the chicken with 1/2 small onion, salt, and pepper. Remove and fry the chicken.
  4. Place the cooked chicken in a serving dish. Arrange the fried potatoes around the plate.
  5. Place the chopped lettuce and cooked zucchini on top of the chicken and potatoes.
  6. Liquefy the tomatoes with the remaining half of the onion, strain, and spread the sauce over the chicken.
  7. Sprinkle dried ground oregano, chili powder, salt, and pepper over the chicken.
  8. Dash some cooking oil and vinegar over the dish.
  9. Serve the dish cold.
