Ingredients

  • 1 recipe Black Bean and Corn Salad
  • 2 cups shredded cooked chicken breast
  • 4 flour tortillas
  • 4 cups shredded lettuce
  • 1/2 cup Monterey Jack cheese, shredded

Instructions

  1. Combine the shredded cooked chicken breast with the Black Bean and Corn Salad.
  2. Bake the flour tortillas in a 375°F oven until crisp, about 7 to 10 minutes.
  3. Place a baked tortilla on each of four plates.
  4. Top each tortilla with 1 cup of shredded lettuce.
  5. Divide the chicken and bean mixture into four portions and mound on top of the lettuce.
  6. Top each tostada with 2 tablespoons of shredded Monterey Jack cheese.
