Creamy, cheesy enchiladas filled with seasoned beef and topped with melted cheese, perfect for a comforting family dinner or casual gathering with bold flavors.

Ingredients

  • 2 cans cream of chicken soup (undiluted)
  • 1 cup sour cream
  • 10 oz. can Ro-Tel tomatoes
  • 1 lb. ground beef
  • 1 1/3 oz. package taco seasoning
  • 12 flour or corn tortillas
  • 2 cups Cheddar cheese, grated
  • 1 medium onion, chopped

Instructions

  1. Combine the undiluted cream of chicken soup, sour cream, and Ro-Tel tomatoes in a bowl.
  2. Brown the ground beef in a skillet and drain excess fat.
  3. Add taco seasoning to the cooked beef and mix well.
  4. Dip a tortilla in the hot soup mixture and fill with the meat, grated cheese, and chopped onion.
  5. Roll up the filled tortilla and place it in a 9 x 13-inch casserole dish.
  6. Repeat with remaining tortillas and filling.
  7. Pour the remaining soup mixture over the assembled enchiladas.
  8. Bake in a preheated oven at 350°F for 20 to 30 minutes.
  9. Sprinkle the remaining cup of grated cheese on top and return to the oven until melted.
