- Combine the undiluted cream of chicken soup, sour cream, and Ro-Tel tomatoes in a bowl.
- Brown the ground beef in a skillet and drain excess fat.
- Add taco seasoning to the cooked beef and mix well.
- Dip a tortilla in the hot soup mixture and fill with the meat, grated cheese, and chopped onion.
- Roll up the filled tortilla and place it in a 9 x 13-inch casserole dish.
- Repeat with remaining tortillas and filling.
- Pour the remaining soup mixture over the assembled enchiladas.
- Bake in a preheated oven at 350°F for 20 to 30 minutes.
- Sprinkle the remaining cup of grated cheese on top and return to the oven until melted.
