Chicken-Vegetable Dish

Ingredients

  • 1 (10 oz.) pkg. frozen broccoli
  • 1 c. uncooked brown rice
  • 2 (6 oz.) whole chicken breasts, skinned and boned
  • 1/4 c. onion, chopped
  • 1 Tbsp. margarine
  • 1/4 tsp. garlic powder
  • 2 medium tomatoes, cut into wedges

Instructions

  1. Thaw broccoli.
  2. Prepare rice according to package directions, except don't use margarine and cook for half the time (do not drain).
  3. Cut chicken into 1/2-inch strips.
  4. In nonstick skillet over medium heat, cook chicken strips and onion in margarine. Stir continuously for 3 to 5 minutes.
  5. Add the rice and its cooking water.
  6. Add broccoli and garlic.
