Ingredients

  • 6 to 8 corn tortillas
  • 1 lb. grated cheese
  • garlic powder to taste
  • 1 can cream of chicken soup
  • 1 tsp. chili powder
  • 2 cups cooked, boned chicken, cut into bite-size pieces
  • 1 can cream of mushroom soup
  • 1 can tomatoes with chilies

Instructions

  1. Line a 9 x 12-inch baking dish with corn tortillas.
  2. Layer cooked, boned chicken, onions, and grated cheese in the casserole.
  3. Spread the cream of chicken and cream of mushroom soups over the layered ingredients.
  4. Mash the tomatoes with chilies and mix with chili powder.
  5. Pour the tomato mixture over the casserole.
  6. Bake at 325°F (163°C) for 1 hour.
  7. Let it cool slightly before serving. This dish freezes well for future meals.
