Ingredients

  • 2 cups shredded Cheddar or Monterey Jack cheese
  • 6 flour tortillas
  • 1 (4 oz.) can green chiles
  • 1/2 cup mild or medium garden style salsa
  • prepared guacamole

Instructions

  1. Sprinkle 2/3 cup shredded cheese onto each of 3 tortillas.
  2. Top each with 1/3 of the drained green chiles and 2 tablespoons of salsa.
  3. Cover with the remaining tortillas, pressing gently.
  4. Cook each quesadilla on a griddle or skillet over medium heat until cheese is melted and tortillas are golden brown, about 2-3 minutes per side.
  5. Slice and serve garnished with prepared guacamole and sliced ripe olives.
