Ingredients

  • 1/4 cup vegetable oil
  • 1 cup flour
  • 1 cup yellow meal
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 1/2 cups cheese
  • 1 (8 1/2 oz.) can cream-style corn
  • 1 (4 oz.) can chopped mild or hot green chilies
  • 1/3 cup milk
  • 2 eggs

Instructions

  1. Preheat oven to 400°F and melt shortening in an 8 or 9-inch square pan in the oven.
  2. In a mixing bowl, combine the flour, yellow meal, baking powder, salt, and sugar.
  3. Add the dry ingredients to the melted shortening along with the cheese, cream-style corn, chopped green chilies, milk, and eggs.
  4. Mix until just blended.
  5. Pour the batter into the prepared pan.
  6. Bake for 30 to 35 minutes or until the top is golden brown.
