- Use a large size (14 x 20-inch) oven bag.
- Mix flour, honey, chili powder, and grated lime peel to create a marinade.
- Place the pork roast in the oven bag and coat it thoroughly with the marinade.
- Add the peeled and quartered sweet potatoes around the pork in the bag.
- Seal the bag and place it in a roasting pan.
- Cook in a preheated oven at 350°F (175°C) for approximately 2 hours, or until the pork reaches an internal temperature of 145°F (63°C).
- Remove from oven, let rest for 10 minutes, then serve slices of pork with roasted sweet potatoes.
