Ingredients

  • 1 Tbsp. flour
  • 3 Tbsp. honey
  • 3 Tbsp. chili powder
  • 2 tsp. grated lime peel
  • 2 1/2 lb. boneless top loin pork roast
  • 3 medium sweet potatoes, peeled and cut in quarters

Instructions

  1. Use a large size (14 x 20-inch) oven bag.
  2. Mix flour, honey, chili powder, and grated lime peel to create a marinade.
  3. Place the pork roast in the oven bag and coat it thoroughly with the marinade.
  4. Add the peeled and quartered sweet potatoes around the pork in the bag.
  5. Seal the bag and place it in a roasting pan.
  6. Cook in a preheated oven at 350°F (175°C) for approximately 2 hours, or until the pork reaches an internal temperature of 145°F (63°C).
  7. Remove from oven, let rest for 10 minutes, then serve slices of pork with roasted sweet potatoes.
