Ingredients

  • 1 lb white fleshed fish
  • 3 Tbsp cornstarch
  • 4 Tbsp cold pressed oil
  • 1 garlic clove
  • 1/2 tsp powdered ginger
  • 1/2 cup broth
  • 3 Tbsp soy sauce
  • 1/2 tsp sea salt
  • 2 Tbsp cornstarch

Instructions

  1. Clean and bone the fish; cut into 1-inch squares.
  2. Dredge the fish lightly in 3 tablespoons of cornstarch.
  3. Heat 4 tablespoons of cold pressed oil in a large skillet or wok until hot but not smoking.
  4. Toss vegetables with garlic and ginger, then add to hot oil and stir-fry until tender-crisp, about 2 minutes.
  5. Push vegetables aside, add fish pieces, and stir-fry until fish is opaque, about 2 minutes.
  6. Add broth, soy sauce, sea salt, and 2 tablespoons of cornstarch; stir well and cook until sauce thickens.
