Shrimp toastettes are crispy, flavorful bites featuring chopped shrimp and water chestnuts on toasted wafers, perfect as appetizers or party snacks for seafood lovers.

Ingredients

  • 1 lb. shrimp, shelled, deveined and coarsely chopped
  • 1/4 cup chopped green onions
  • 1/4 cup finely chopped water chestnuts
  • 1 tablespoon dry sherry (optional)
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/8 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 large egg, beaten
  • 36 to 40 Triscuits wafers
  • oil for frying

Instructions

  1. In a medium bowl, combine the shrimp, green onions, water chestnuts, sherry, salt, sugar, black pepper, and cornstarch.
  2. Mix well.
  3. Add the beaten egg and mix until thoroughly combined.
  4. Allow the mixture to set for at least 30 minutes before using.
