Chipotle Chicken & Rice
Ingredients
- 2 boneless skinless chicken breasts, cut into 1 inch pieces ⓘ
- 1 green bell pepper, chopped ⓘ
- 2 tablespoons vegetable oil ⓘ
- 1 (14.5 ounce) can Red Gold(R) Petite Diced Tomatoes with Chipotle ⓘ
- 2 cups chicken broth
- 1 cup long grain white rice ⓘ
- Salt and black pepper to taste ⓘ
- 1 cup shredded cheddar cheese ⓘ
Instructions
- In a large skillet heat oil and brown chicken and green bell pepper. Add remaining ingredients, except cheese, and bring to a boil.
- Cover and cook for 17 to 20 minutes or until all liquid is absorbed. Sprinkle with cheese and cook an additional 5 minutes to melt cheese.
