Chocolate Chip Carrot Bread
Ingredients
- 3 cups flour ⓘ
- 1 cup sugar ⓘ
- 1 cup brown sugar, packed ⓘ
- 3 teaspoons ground cinnamon ⓘ
- 2 teaspoons baking powder ⓘ
- 1 teaspoon baking soda ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon ground ginger ⓘ
- 1/4 - 1/2 teaspoon ground cloves ⓘ
- 3 eggs ⓘ
- 1/4 cup orange juice ⓘ
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract ⓘ
- 2 cups carrots, grated ⓘ
- 1 cup semi-sweet chocolate chips ⓘ
Instructions
- In a large bowl, combine the first nine ingredients.
- In a small bowl, beat the eggs, orange juice, oil, and vanilla.
- Stir wet ingredients into dry ingredients until just moistened.
- Fold in carrots and chocolate chips.
- Transfer to two greased loaf pans.
- Bake at 350°F for 55-60 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before removing from pans to wire rack.
