Ingredients

  • 1 egg
  • 1/2 cup sugar
  • 3 tablespoons melted margarine
  • 1 cup pancake mix or Bisquick
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  1. Beat the egg in a mixing bowl.
  2. Gradually add 1/2 cup of sugar and mix well.
  3. Stir in 3 tablespoons of melted margarine lightly.
  4. Alternately add pancake mix and milk-vanilla mixture to the bowl, stirring gently after each addition.
  5. Pour the batter into a greased 8-inch square pan.
  6. In a small bowl, combine 2 tablespoons of sugar and cinnamon, then sprinkle over the batter along with chocolate chips.
  7. Bake at 400°F for 20 minutes or until a toothpick inserted into the center comes out clean.
