Ingredients

  • 12 1/2 oz. caramels
  • 2 Tbsp. evaporated milk
  • 2 c. pecan halves
  • 8 oz. milk chocolate
  • 1/3 bar paraffin

Instructions

  1. Combine caramels and evaporated milk in the top of a double boiler.
  2. Heat over water until the caramel is melted, stirring occasionally.
  3. Stir in pecan halves into the caramel mixture.
  4. Drop spoonfuls of the caramel and pecan mixture onto buttered wax paper.
  5. Cool for at least 15 minutes to set.
  6. Combine milk chocolate and paraffin in the top of a double boiler.
  7. Heat until the chocolate and paraffin are melted and smooth.
  8. Using a toothpick, dip each caramel and pecan cluster into the melted chocolate.
  9. Cool on wax paper until the chocolate is set.

Tips & Substitutions

For an extra layer of flavor, consider using dark chocolate instead of milk chocolate, which will add a nice contrast to the sweetness of the caramel. If you don't have paraffin, you can skip it; the chocolate will still set fine, though it may not have the same glossy finish. Ensure that your wax paper is well-buttered to prevent sticking.

Serving Suggestions

These chocolate-covered pecans make an excellent treat for gatherings or as gifts. Serve them alongside a warm cup of coffee or tea for a delightful afternoon snack. They also pair beautifully with the Heart Healthy Luscious Cake for a balanced dessert platter, providing a mix of textures and flavors.

Storage & Reheating

Store the chocolate-covered pecans in an airtight container at room temperature for up to two weeks. If you prefer a firmer bite, you can refrigerate them, but allow them to come to room temperature before serving to regain their texture. Avoid placing them near strong odors to maintain their flavor.

Frequently Asked Questions

Can I use a different type of nut?

Absolutely! While pecans are traditional, you can substitute with walnuts or almonds for a different taste. Just be sure to adjust the toasting time based on the nut type, as some may require longer or shorter cooking times to enhance their flavor.

How can I make these vegan?

To make vegan chocolate-covered pecans, substitute the caramels with a vegan caramel recipe or store-bought vegan caramel. Use dairy-free chocolate in place of milk chocolate, and ensure that the paraffin you choose is plant-based or omit it altogether for a simple chocolate coating.

Can I freeze the chocolate-covered pecans?

Yes, you can freeze chocolate-covered pecans for up to three months. Place them in a single layer on a baking sheet to freeze individually, then transfer them to an airtight container. When ready to enjoy, let them thaw at room temperature to retain their texture.
