Ingredients

  • 1/2 cup slivered almonds
  • 3 tablespoons sugar
  • 12 ounces semi-sweet chocolate chips
  • 3 large egg yolks
  • 3 large egg whites
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 8 ounces baked angel food cake

Instructions

  1. Place slivered almonds on an ungreased cookie sheet and bake at 350°F until light brown. Cool and set aside.
  2. In the top of a double boiler over hot water, melt the semi-sweet chocolate chips with sugar. Cool.
  3. Mix in beaten egg yolks. Gradually fold in stiffly beaten egg whites.
  4. Fold in whipped cream and vanilla extract.
  5. Tear angel food cake into 1/2-inch pieces.
  6. Put half of the cake pieces on the bottom of a buttered 10-inch spring-form pan.
  7. Cover with half of the chocolate mixture.
  8. Repeat with remaining cake pieces and chocolate mixture.
  9. Refrigerate for at least 24 hours.
  10. Remove the rim of the spring-form pan.
  11. Top with toasted almonds before serving.
  12. May be made up to 3 days in advance.
