Chocolate-Filled Doughnuts

Ingredients

  • 1 1/4 cups granulated sugar
  • 2 None eggs
  • 1 1/2 tbsp butter, softened
  • 1/2 cup buttermilk
  • 3.5 oz milk chocolate, melted
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 2 tsp ground cinnamon
  • 20 None mini chocolate easter eggs, unwrapped
  • None None vegetable oil, for shallow frying

Instructions

  1. Cream 1/3 cup sugar, eggs and butter until light and fluffy. Gradually add buttermilk and melted chocolate. Sift together flour, baking powder and baking soda. Fold in until just combined and smooth. Cover and chill for 1 hour 30 mins.
  2. Meanwhile, combine remaining sugar and cinnamon. Set aside.
  3. Turn dough out onto a lightly floured surface and divide into 20 portions. Using floured hands, roll each portion into a ball around an Easter egg, completely encasing eggs. Flatten slightly.
  4. Heat oil in a large pan over low heat. Working in batches, shallow fry doughnuts, turning constantly, for 4-5 mins, until golden and cooked through. Drain on paper towels then toss in cinnamon sugar. Serve immediately.
