  • 1 pkg. gelatin
  • 1 c. milk
  • 3 eggs
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 pt. whipping cream

Instructions

  1. Put chocolate mint cookies through a food chopper to create crumbs.
  2. Pack the cookie crumbs into a 9-inch spring-form pan and set some aside for topping.
  3. Soak gelatin in milk for 1 hour.
  4. Beat egg yolks, sugar, and salt in the top of a double boiler until thick, about 5 to 7 minutes. Add soaked gelatin and cook until thick. Cool thoroughly.
  5. Beat egg whites until stiff peaks form.
  6. Whip cream with vanilla and a few drops of green food coloring.
  7. Fold the egg yolks and egg whites into the whipped cream mixture.
  8. Pour the mixture into the prepared pan and sprinkle remaining cookie crumbs on top.
  9. Refrigerate overnight before serving.
