Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tablespoon butter
  • 1 can 16 oz. whole new potatoes, drained and sliced
  • 1 can stewed tomatoes
  • 1 can 15 oz. spinach, drained
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Saute chopped onion and green pepper in butter until soft.
  2. Add sliced potatoes and saute for 2 minutes.
  3. Add stewed tomatoes and cook over high heat until slightly thickened.
  4. Add drained spinach and heat through.
  5. Sprinkle with grated Parmesan cheese before serving.
