Ingredients

  • 2 (3 oz.) packages lemon jello
  • 2 cups boiling water
  • 1 pint lemon sherbet
  • 1 (8 3/4 oz.) can crushed pineapple, undrained
  • 1 1/2 cups small curd cream-style cottage cheese

Instructions

  1. Dissolve the lemon jello in boiling water.
  2. Add the lemon sherbet gradually, stirring until melted.
  3. Fold in the undrained crushed pineapple.
  4. Chill until the mixture is partially set.
  5. Fold in the cottage cheese.
  6. Pour into a 6 1/2-cup ring mold and chill until fully set.
  7. Unmold onto a serving platter and decorate as desired.
