Ingredients

  • 12 oz. semi-sweet chocolate morsels
  • 6 Tbsp. cold water
  • 4 Tbsp. sugar
  • 6 eggs, separated
  • 1 1/2 pt. heavy cream
  • 2 tsp. vanilla
  • 2 pkg. ladyfingers
  • sprinkling of chocolate sprinkles

Instructions

  1. Make one day in advance.
  2. Line the bottom of a spring-form pan with wax paper, tracing the pan bottom and cutting it to fit.
  3. Melt chocolate morsels and cold water in a double boiler.
  4. Add sugar to the melted chocolate.
  5. Remove from heat and add egg yolks.
  6. Beat egg whites until stiff and fold into the chocolate mixture.
  7. In a large bowl, beat 1 pint of heavy cream while adding vanilla.
  8. Fold the whipped cream into the chocolate mixture.
  9. Line the bottom and sides of the pan with ladyfingers to form a picket fence, using any leftovers as needed. Chill overnight.
  10. Two hours before serving, beat 1/2 pint of heavy cream with 2 tablespoons of sugar.
  11. Pour the whipped cream over the mousse and sprinkle with chocolate sprinkles immediately before serving.
