Ingredients

  • 3 egg yolks
  • 4 egg whites
  • 1/2 cup sugar
  • 8 oz semi-sweet chocolate
  • 2 Tbsp water
  • 1/4 cup butter
  • pinch of salt

Instructions

  1. Beat egg yolks and sugar together until pale and creamy.
  2. Melt semi-sweet chocolate with water and butter until smooth, then fold into the egg yolk mixture.
  3. Beat egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold the whipped egg whites into the chocolate mixture.
  5. Spoon the mousse into serving dishes and chill before serving.
