Chocolate Orange Cake

Ingredients

  • 4 oz. semi-sweet chocolate
  • 1 Tbsp. cocoa powder
  • 2 Tbsp. baking powder
  • 2 c. sifted pastry flour
  • 1/2 c. butter
  • 1 c. sugar
  • 2/3 c. orange juice
  • 3 egg whites, whipped stiff

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a double boiler, melt the semi-sweet chocolate.
  3. In a bowl, sift together the cocoa powder, baking powder, and pastry flour.
  4. In another bowl, cream the butter with the sugar until very light.
  5. Add dry ingredients and orange juice alternately in thirds to the creamed mixture.
  6. Blend in the melted chocolate.
  7. Gently fold in the whipped egg whites until just combined.
  8. Pour the batter into a greased baking pan.
  9. Bake for approximately 30 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.
