Ingredients

  • 6 eggs
  • 1 cup plus 2 tablespoons sugar
  • 6 tablespoons cocoa
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • vanilla ice cream

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 15 x 10 x 1-inch jelly roll pan, line with waxed paper, and grease the paper.
  3. Separate the eggs.
  4. Beat egg yolks until thick and creamy using an electric beater.
  5. Gradually add sugar to the egg yolks.
  6. Stir in cocoa, vanilla extract, and almond extract.
  7. Beat egg whites until stiff peaks form.
  8. Gently fold the egg whites into the batter.
  9. Pour the batter into the prepared pan.
  10. Bake for 25 minutes or until the cake pulls away from the sides of the pan.
  11. Place a sheet of foil or a clean dish towel on a cooling rack and sprinkle with confectioners' sugar.
  12. Invert the pan over the foil or towel and remove the cake.
  13. Peel away the waxed paper.
  14. While warm, roll the cake starting with the short side.
  15. Cover with waxed paper and cool completely.
  16. Once cooled, unroll the cake, spread with vanilla ice cream, and reroll.
  17. Cover with confectioners' sugar or whipped cream.
  18. Slice and serve.
