- Preheat oven to 350°F.
- Grease a 15 x 10 x 1-inch jelly roll pan, line with waxed paper, and grease the paper.
- Separate the eggs.
- Beat egg yolks until thick and creamy using an electric beater.
- Gradually add sugar to the egg yolks.
- Stir in cocoa, vanilla extract, and almond extract.
- Beat egg whites until stiff peaks form.
- Gently fold the egg whites into the batter.
- Pour the batter into the prepared pan.
- Bake for 25 minutes or until the cake pulls away from the sides of the pan.
- Place a sheet of foil or a clean dish towel on a cooling rack and sprinkle with confectioners' sugar.
- Invert the pan over the foil or towel and remove the cake.
- Peel away the waxed paper.
- While warm, roll the cake starting with the short side.
- Cover with waxed paper and cool completely.
- Once cooled, unroll the cake, spread with vanilla ice cream, and reroll.
- Cover with confectioners' sugar or whipped cream.
- Slice and serve.
