Chocolate Scotchroos are sweet and crunchy bars with a peanut butter and cereal base topped with a smooth chocolate and butterscotch coating, perfect for parties and snacking.

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 6 cups Rice Krispies
  • 6 oz. semi-sweet chocolate chips
  • 6 oz. butterscotch chips

Instructions

  1. Combine sugar and corn syrup in a large heavy saucepan and cook over medium heat until it boils, stirring often.
  2. Remove from heat and mix in peanut butter.
  3. Add Rice Krispies cereal and stir until well coated.
  4. Pat the mixture into a buttered 9 x 13-inch pan.
  5. Melt chocolate chips and butterscotch chips together in a double boiler.
  6. Spread the melted mixture evenly over the cereal bars.
  7. Cut into bars and cool in the fridge before serving.
