Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tablespoon cinnamon
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 4 large eggs
  • 1.25 cups vegetable oil
  • 1 (10 oz) package frozen sliced sweetened strawberries, thawed
  • 1.25 cups chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9 x 5-inch loaf pans.
  3. Combine flour, granulated sugar, cinnamon, baking soda, and salt in a large bowl and mix well.
  4. Whisk eggs in a small bowl until blended.
  5. Add eggs and oil to the flour mixture and stir just until combined.
  6. Fold in thawed strawberries and chopped walnuts.
  7. Spoon equal portions of the batter into the prepared loaf pans.
  8. Bake until a toothpick inserted in the centers comes out clean, about 70 minutes.
  9. Cool loaves in pans for 5 to 10 minutes.
  10. Remove from pans and cool completely on a wire rack.
