Ingredients

  • 4 egg yolks
  • 1/3 cup sugar
  • 5 oz bittersweet chocolate
  • 2 Tbsp heavy cream
  • 1 tsp instant coffee
  • 2 Tbsp cognac or rum or Grand Marnier or liqueur of choice
  • 5 egg whites

Instructions

  1. Ribbon egg yolks, sugar, and salt heavily.
  2. Melt chocolate and let cool.
  3. Add heavy cream, instant coffee dissolved in the liqueur, and blend into the egg yolk mixture.
  4. Beat egg whites until stiff peaks form.
  5. Fold the beaten egg whites into the chocolate mixture gently.
  6. Spoon the mixture into a buttered and lightly sugared 6-cup souffle dish.
  7. Bake in a 400°F (200°C) oven for 12 to 14 minutes.
  8. Can be frozen. To serve, take from freezer and bake immediately on the lower rack, adding 5 minutes for a lighter souffle.
