Chopped Raw Salad

Ingredients

  • 4 cups wild arugula
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 tablespoon diced red onion
  • 2 tablespoons raw sliced almonds
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • kosher salt to taste
  • Ground black pepper to taste

Instructions

  1. Chop the broccoli florets and tomatoes, individually, into small pieces.
  2. Roughly chop the arugula then add previously chopped tomatoes, broccoli, red onions, sliced almonds and give it another rough chop.
  3. Whisk together balsamic vinegar and oil and drizzle over the salad.
  4. Toss the salad with vinaigrette, salt and lots of ground black pepper.
