Chopped Salad With Goat Cheese

Ingredients

  • 6 tbsp olive oil
  • 2-3 tbsp lime juice
  • 1-2 None garlic cloves, crushed
  • None None Pinch cayenne pepper
  • 12 oz tomatoes, sliced into wedges
  • 7 oz zucchini, diced
  • 1 None red onion, sliced into rings
  • 1 can (11 oz) whole kernel corn
  • 4 oz semi-firm goat cheese cheese, cubed

Instructions

  1. For the dressing, whisk the oil, lime juice, garlic and cayenne pepper until well blended. Season with salt and pepper. Toss the vegetables with the dressing in a large bowl.
  2. Sprinkle with salad with the cheese. Serve the lettuce on the side.
