Ingredients

  • 18 1/2 oz. yellow cake mix
  • 4 eggs
  • 1/2 cup dark rum
  • 1/4 cup raisins and/or dried fruit
  • 1/4 cup chopped nuts
  • 1 (4-serving) size package lemon instant pudding mix
  • 1/2 cup apricot nectar
  • 1/4 cup Wesson oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a Bundt or tube pan.
  3. Combine the cake mix, eggs, dark rum, dried fruit, chopped nuts, lemon pudding mix, apricot nectar, and oil in a bowl.
  4. Blend well; then beat at medium speed for 2 minutes.
  5. Pour the batter into the prepared pan.
  6. Bake for 55 minutes or until the cake tests done with a toothpick.
  7. Cool in the pan for 15 minutes.
  8. Prepare the glaze while the cake is cooling.
