Ingredients

  • 1 cup shortening
  • 1/2 cup sugar
  • 2 1/2 to 3 cups flour
  • powdered sugar, sifted
  • 2 cups finely chopped nuts
  • food coloring (optional)
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • pinch of salt
  • 3 tablespoons rum flavoring

Instructions

  1. Cream shortening, sugar, vanilla, lemon extract, and rum flavoring until well combined.
  2. Add food coloring if desired.
  3. Blend in flour, salt, and finely chopped nuts, using your hands to incorporate.
  4. Chill the dough for 1 hour.
  5. Shape the chilled dough into 1-inch balls.
  6. Bake on an ungreased cookie sheet at 350°F (175°C) for 15 to 20 minutes until lightly browned.
  7. Remove from oven and roll the hot cookies in sifted powdered sugar.
  8. Allow to cool slightly and enjoy.
