Ingredients

  • 16 lb. cucumbers
  • 10 lb. sugar
  • 1 box mixed spices
  • 1 pt. salt
  • 1 gal. vinegar
  • 1/2 box alum

Instructions

  1. To each gallon of water, put 1 pint of salt.
  2. Wash cucumbers and place in a churn.
  3. Cover with salty water and leave for 14 days.
  4. Remove, rinse, and cut cucumbers lengthwise.
  5. Cover with water and add alum. Leave overnight.
  6. Drain and rinse cucumbers; put in vinegar overnight.
  7. Drain vinegar from cucumbers.
  8. Put cucumbers in a churn in layers: one layer of cucumbers, one layer of sugar, then a sprinkle of mixed spices.
  9. Repeat layering until all cucumbers are used.
  10. Cover and store to use as desired.
