Crispy, golden Mexican churros with a hint of lemon peel, perfect for snacking or dessert, enjoyed with sugar coating for a sweet, crunchy treat.

Ingredients

  • 1 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 eggs
  • peel of 1/2 lemon

Instructions

  1. In a saucepan, bring water, sugar, and salt to a boil; remove from heat.
  2. Stir in flour all at once and beat until smooth.
  3. Beat in eggs, one at a time, until mixture is smooth.
  4. Spoon batter into a pastry bag fitted with a large star tip.
  5. Add lemon peel to hot oil and heat to 375°F.
  6. Fry churros, a few at a time, for 3 to 4 minutes or until golden brown, turning as necessary.
  7. Drain on paper towels.
  8. Roll in granulated sugar or powdered sugar.
