Ingredients

  • 2 cups apple cider or apple juice
  • 1 (3 oz.) package lemon-flavored gelatin
  • 1 cup finely chopped apples
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped pecans

Instructions

  1. In a saucepan, bring 1 cup of apple cider to a boil.
  2. Dissolve the lemon-flavored gelatin in the boiling cider, stirring constantly.
  3. Stir in the remaining apple cider.
  4. Chill until the mixture is partially set, with the consistency of unbeaten egg whites.
  5. Fold in the chopped apples, celery, and pecans.
  6. Pour the mixture into a 3-cup mold or six individual molds.
  7. Chill until the gelatin is firm.
  8. Unmold onto lettuce-lined plates.
  9. Serve with mayonnaise or salad dressing.
