- In a saucepan, bring 1 cup of apple cider to a boil.
- Dissolve the lemon-flavored gelatin in the boiling cider, stirring constantly.
- Stir in the remaining apple cider.
- Chill until the mixture is partially set, with the consistency of unbeaten egg whites.
- Fold in the chopped apples, celery, and pecans.
- Pour the mixture into a 3-cup mold or six individual molds.
- Chill until the gelatin is firm.
- Unmold onto lettuce-lined plates.
- Serve with mayonnaise or salad dressing.
