Ingredients

  • 15 large cucumbers
  • 2 cups lime
  • 1 cup vinegar
  • 1 1/2 oz. red food coloring
  • 3 cups vinegar
  • 11 cups sugar
  • 1 package (9 oz.) red hots
  • 8 1/2 cups water
  • 2 Tbsp. alum

Instructions

  1. Add lime to 8 1/2 cups water.
  2. Add cucumbers and soak for 24 hours.
  3. Rinse 3 times to remove lime and leave in ice water for 3 hours.
  4. Drain the cucumbers.
  5. Combine 1 cup vinegar, alum, and red food coloring. Add cucumbers and cover with water.
  6. Simmer for 1 hour.
  7. While mixture is simmering, mix 3 cups vinegar, 3 cups water, 11 cups sugar, cinnamon sticks, and red hots.
  8. Boil until the sugar and red hots are melted.
  9. Pour the hot mixture over drained cucumbers and let stand for 12 hours.
  10. Heat the mixture to boiling.
  11. Pack the pickles into jars and seal.
