Cinnamon Date Squares

Ingredients

  • 8 oz. pitted dates
  • 3/4 c. plus 3 Tbsp. sugar
  • 3/4 tsp. vanilla
  • 1 3/4 c. flour
  • 3/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 lb. butter (room temperature)
  • 1 egg
  • 1 1/2 tsp. milk

Instructions

  1. Combine dates, 2 tablespoons sugar and 1/2 cup water in saucepan.
  2. Simmer until dates are soft, about 3 minutes.
  3. Stir in 1/4 teaspoon vanilla.
  4. Combine flour, baking powder, salt and cinnamon.
  5. Beat 3/4 cup sugar into butter, then egg, 1/2 teaspoon vanilla and finally the flour mixture.
  6. Wrap and chill.
  7. Between 2 sheets of wax paper, roll out half the dough to a 9-inch square and put into a buttered 9-inch pan.
  8. Spread with dates.
  9. Roll out remaining dough and put on top.
  10. Press edges with fork and vent. Brush with milk and sprinkle with 1 tablespoon sugar.
  11. Bake at 350° for 40 minutes or until golden.
  12. Cool; cut into bars.
