Ingredients

  • 3 cups whole almonds
  • 2 egg whites
  • 4 teaspoons cinnamon
  • pinch of salt
  • 1 cup sugar
  • 1/3 cup butter

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Place butter in a 15 1/2 x 10 1/2-inch pan and put in the oven to melt.
  3. In a bowl, beat egg whites with a pinch of salt until frothy.
  4. Gradually add sugar to the egg whites and beat until stiff peaks form.
  5. Fold in almonds and cinnamon into the egg white mixture.
  6. Pour the almond mixture into the pan with melted butter and toss to coat evenly.
  7. Bake for approximately 40 minutes, tossing every 10 minutes, until almonds are crisp.
  8. Allow to cool and store in an airtight container.
