- Preheat oven to 325°F (160°C).
- Place butter in a 15 1/2 x 10 1/2-inch pan and put in the oven to melt.
- In a bowl, beat egg whites with a pinch of salt until frothy.
- Gradually add sugar to the egg whites and beat until stiff peaks form.
- Fold in almonds and cinnamon into the egg white mixture.
- Pour the almond mixture into the pan with melted butter and toss to coat evenly.
- Bake for approximately 40 minutes, tossing every 10 minutes, until almonds are crisp.
- Allow to cool and store in an airtight container.
