Cinnamon Spiral Bread

- Dissolve yeast in warm water in a mixing bowl.
- Stir in milk, oats, brown sugar, shortening, salt, raisins, and half the flour. Mix with a spoon until smooth.
- Add the rest of the flour and mix with hands to form a dough.
- Turn the dough onto a lightly floured board.
- Knead until smooth and elastic, about 5 minutes.
- Place the dough in a greased bowl, turning to grease the top side.
- Let rise until doubled in size in a warm place, about 1½ to 2 hours.
- Divide the dough into two parts and shape each into a ball.
- Roll each into a 15 x 8-inch oblong rectangle.
- Sprinkle with a mixture of ½ cup sugar and 2 teaspoons cinnamon, setting aside 2 tablespoons of the mixture.
- Roll up each rectangle like a jelly roll, sealing tightly at the ends.
