Ingredients

  • pastry (for unbaked 9-inch double crust pie)
  • 2/3 to 3/4 cup sugar
  • 3 Tbsp cornstarch
  • 1/8 tsp salt
  • 1/4 cup water
  • 5 cups blueberries
  • 1 1/2 Tbsp butter or margarine
  • 1 1/2 tsp lemon juice

Instructions

  1. Combine sugar, cornstarch, and salt in a medium saucepan for the filling.
  2. Stir in water and add 3 cups of blueberries.
  3. Cook and stir on medium heat until the mixture thickens and begins to boil. Remove from heat.
  4. Cool the filling slightly.
  5. Place the remaining 2 cups of blueberries in a pie pan lined with pastry.
  6. Stir butter and lemon juice into the cooked berry mixture.
  7. Spoon the filling over the fresh berries in the crust.
  8. Cover the pie with a gilled top crust.
  9. Bake at 425°F for 30 to 40 minutes.
