Classic Tiramisu

- In a small mixer bowl, beat egg yolks and sugar until thick and lemon-colored, about 1 minute.
- Place the bowl over a double boiler with boiling water.
- Reduce heat to low and cook for 8 to 10 minutes, stirring constantly.
- Remove from heat.
- Add mascarpone cheese, beating well.
- In a small mixer bowl, whip cream until stiff peaks form.
- Fold whipped cream into the egg yolk mixture; set aside.
- Line the bottom and sides of a 2 1/2 to 3-quart bowl or souffle dish with ladyfinger halves, split sides up.
- Brush the ladyfingers with coffee liqueur or Brandied Espresso.
- Spoon half of the egg yolk-cream mixture into the ladyfinger-lined dish.
- Repeat with remaining ladyfingers, espresso, and cream layer.
- Garnish with sweetened whipped cream, cocoa, and chocolate curls.
- Cover and refrigerate for several hours or overnight before serving.
