- Combine cocoa, sugar, and salt in a large saucepan.
- Gradually add milk, mixing thoroughly.
- Bring to a bubbly boil on high heat, stirring continuously.
- Reduce to medium heat and continue boiling without stirring until the mixture reaches 232°F or forms a soft ball stage in cold water.
- Ensure the thermometer bulb is not resting on the bottom of the saucepan.
- Remove the saucepan from heat.
- Add margarine and vanilla to the mixture.
- Do not stir after adding vanilla and margarine.
- Allow the fudge to cool at room temperature until it reaches 110°F.
- Add peanut butter and mix well.
- If desired, stir in nuts; they are optional.
- Beat the mixture by hand or with an electric mixer until it thickens and loses some gloss.
- Quickly pour and spread the fudge into a lightly buttered 8x8x2-inch glass dish.
- Allow to cool completely, then cut into squares.
