Ingredients

  • 2/3 cup cocoa
  • 3 cups sugar
  • 1/8 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup margarine
  • 1 tablespoon vanilla

Instructions

  1. Combine cocoa, sugar, and salt in a large saucepan.
  2. Gradually add milk, mixing thoroughly.
  3. Bring to a bubbly boil on high heat, stirring continuously.
  4. Reduce to medium heat and continue boiling without stirring until the mixture reaches 232°F or forms a soft ball stage in cold water.
  5. Ensure the thermometer bulb is not resting on the bottom of the saucepan.
  6. Remove the saucepan from heat.
  7. Add margarine and vanilla to the mixture.
  8. Do not stir after adding vanilla and margarine.
  9. Allow the fudge to cool at room temperature until it reaches 110°F.
  10. Add peanut butter and mix well.
  11. If desired, stir in nuts; they are optional.
  12. Beat the mixture by hand or with an electric mixer until it thickens and loses some gloss.
  13. Quickly pour and spread the fudge into a lightly buttered 8x8x2-inch glass dish.
  14. Allow to cool completely, then cut into squares.
