Ingredients

  • 1 cup white corn meal
  • 3 cups milk
  • 2 tablespoons shortening
  • 3 eggs
  • 1 1/2 teaspoons salt
  • 3 teaspoons baking powder

Instructions

  1. Preheat oven to 450°F.
  2. Combine corn meal, shortening, and 2 cups of milk in a pan over medium heat.
  3. Bring mixture just to a boil, stirring constantly.
  4. In a separate bowl, blend beaten eggs, salt, and remaining milk.
  5. Add the egg mixture to the corn meal mixture.
  6. Mix well.
  7. Stir in baking powder.
  8. Pour into a greased 1 1/2 to 2-quart casserole.
  9. Bake for 25 to 30 minutes.
  10. Serve hot with butter.
