Ingredients

  • 1 1/2 Tbsp butter
  • 2 2/3 cups coconut
  • 4 eggs
  • 2/3 cup sugar
  • 1 (8 oz) package cream cheese
  • 3 Tbsp lemon juice

Instructions

  1. Spread softened butter evenly over the bottom and sides of a 9-inch pie pan.
  2. Press 1 1/3 cups of coconut into the butter to form a shell.
  3. In a mixing bowl, combine 1 cup coconut, eggs, sugar, cream cheese, and lemon juice.
  4. Blend the mixture until smooth, about 1 1/2 minutes.
  5. Pour the filling into the coconut shell.
  6. Sprinkle the remaining coconut in a ring around the top and in the center of the pie.
  7. Bake at 325°F (163°C) for 30 minutes.
  8. Refrigerate leftovers before serving.
