- Spread softened butter evenly over the bottom and sides of a 9-inch pie pan.
- Press 1 1/3 cups of coconut into the butter to form a shell.
- In a mixing bowl, combine 1 cup coconut, eggs, sugar, cream cheese, and lemon juice.
- Blend the mixture until smooth, about 1 1/2 minutes.
- Pour the filling into the coconut shell.
- Sprinkle the remaining coconut in a ring around the top and in the center of the pie.
- Bake at 325°F (163°C) for 30 minutes.
