Coconut Corn Muffins

Ingredients

  • 1/4 cup yellow cornmeal
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut milk
  • 1/2 cup shredded coconut
  • 1 egg
  • 1 1/2 teaspoons oil
  • 1/4 teaspoon vanilla

Instructions

  1. Combine all the dry ingredients. In another bowl wisk the coconut milk, egg, oil, vanilla. Pour over the dry ingredients. Mix till just moist and incorporated. Add shreddered coconut. Put into greased muffin tin. Bake 375 for 15 minutes or till done.
