Coconut-Date Mounds are delightful no-bake treats combining sweet dates, crunchy cornflakes, toasted walnuts, and shredded coconut, topped with a candied cherry for a colorful finish—perfect for snacking or gifting.

Ingredients

  • 3 1/2 cups cornflakes
  • 1 cup chopped, pitted dates
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1 1/3 cups flaked coconut
  • 12 candied cherries, halved

Instructions

  1. Crush cornflakes slightly with your hands and set aside.
  2. Combine chopped dates, sugar, and beaten eggs in a 10-inch skillet.
  3. Cook over medium heat, stirring constantly, until mixture pulls away from the sides of the pan, about 5 minutes.
  4. Remove from heat and stir in chopped walnuts and vanilla extract.
  5. Gently fold in the crushed cornflakes.
  6. Allow the mixture to cool slightly, about 5 minutes.
  7. Shape the mixture into 1 1/2-inch balls and roll each in flaked coconut.
  8. Place the coated balls on waxed paper-lined baking sheets.
  9. Press a halved candied cherry into the top of each ball, flattening slightly.
