- Crush cornflakes slightly with your hands and set aside.
- Combine chopped dates, sugar, and beaten eggs in a 10-inch skillet.
- Cook over medium heat, stirring constantly, until mixture pulls away from the sides of the pan, about 5 minutes.
- Remove from heat and stir in chopped walnuts and vanilla extract.
- Gently fold in the crushed cornflakes.
- Allow the mixture to cool slightly, about 5 minutes.
- Shape the mixture into 1 1/2-inch balls and roll each in flaked coconut.
- Place the coated balls on waxed paper-lined baking sheets.
- Press a halved candied cherry into the top of each ball, flattening slightly.
